The signature dishes lean Tsugaru-regional: Mutsu Bay scallops (raw, charcoal-grilled, butter-grilled, all from the same morning's catch), apple-pork (kuroge pork from Aomori farms glazed with Tsugaru-apple cider during the cook), kuro-ninniku (Aomori's signature black garlic, served with grated daikon and a small splash of soy as a snack), Oma tuna sashimi when available, and a deep yamato-imo grated mountain potato that the chef serves over chilled buckwheat. A meal with two beers and a small sake flight runs ¥4,500-7,000 per person.
The room seats sixty-five across two floors plus a third-floor balcony seating used in summer. The shamisen stage is a small raised platform at the back of the main dining room visible from most tables. Reservations are useful on weekend evenings (and matter heavily during Nebuta Festival week in early August); a few days' notice is enough most of the year. Cards are accepted; the kitchen runs until 11:30pm.
