About Pavillon

The Baur au Lac has been owned by the same family since 1844, and Pavillon is its show kitchen: a glass rotunda set in the hotel's private park where the Schanzengraben canal slips past the windows. Laurent Eperon cooks French haute cuisine with two Michelin stars and 18 GaultMillau points, and he has spent the better part of two decades inside this house, which shows in a kitchen and dining room that move as one machine.

Eperon's food is classical at its bones, seasonal at its surface: langoustine and turbot in sauces with real depth, game in autumn, and a vegetal lightness that keeps a long menu from turning heavy. Tasting menus run from CHF 205 to CHF 280, with a weekday lunch entry from about CHF 98 that lets the banking quarter treat the rotunda as a working canteen of last resort.
