The restaurant's choice to run Cantonese rather than Shaanxi cooking is deliberate: Xi'an's traditional cuisine is served with authenticity at a thousand addresses across the city, but there is no other restaurant in Xi'an running Cantonese at hotel-group international standard, and the hotel's corporate-entertaining clientele needs one.

The menu is straight-down-the-line serious Cantonese. The Peking duck (anchored here as the house signature despite the Beijing geography) is prepared over two days: air-chilled for 24 hours, glazed with maltose, roasted over Chinese-pear wood in a hung oven. The kitchen carves tableside in the ritual format — twenty-four slices of skin, twenty-four slices of meat, with pancakes, hoisin, scallion, and cucumber on the side.
