Cafe Uno is the principal restaurant of the Vigan Plaza Hotel — a converted nineteenth-century Spanish-colonial mansion on Plaza Burgos that operates as the city's most-historic boutique hotel. The dining room occupies the building's original ground-floor parlour, with the high ceilings, capiz-shell windows, and antique narra-wood furnishings preserved from the original construction. The kitchen serves Modern Filipino cuisine with strong Ilocano regional influences in a presentable air-conditioned format.
The menu is broad. Filipino classics include adobo (₱280), kare-kare (₱340), sinigang na baboy (₱290), pinakbet (₱180), and crispy pata (₱520). Ilocano regional dishes include bagnet (₱320), Vigan longganisa-and-rice plate (₱220), and Vigan empanada (₱60). The weekend Filipino merienda buffet (3-5pm) at ₱450 is the city's most-recommended afternoon-snack format and includes a tasting of all the regional sweets (tinubong, bibingka, kalamay).
The room seats sixty across the main parlour plus eight tables in a smaller back room used for private events.
