About Opus at Hotel Imperial

The Hotel Imperial has been receiving royalty since Kaiser Franz Joseph inaugurated it in 1873, and the kitchen of Opus — recipient of its first Michelin star in the 2026 guide — cooks with an awareness of this inheritance. Chef Harald Brunner approaches Austrian fine dining not as a set of dishes to be restored but as a tradition to be extended: the Tafelspitz is still on the menu, but it arrives in a form that reflects fifty additional years of culinary thinking.

The dining room is among the most formally beautiful in Vienna: gilt-edged cornices, crystal chandeliers, silk wall hangings in imperial gold, and views over the Ringstrasse that frame the Staatsoper opposite. Tables are spaced as they would have been in a century when conversation and privacy were considered inseparable — a rarity in contemporary restaurants and a particular asset for business entertaining.

Brunner's tasting menu opens with a Beluga caviar service — Vienna's finest, paired with a warm potato blini and Styrian pumpkin seed oil, which creates an unexpected and successful combination. The Wachau apricot glazed duck breast, served with red cabbage and Viennese semolina dumplings, is the menu's most culturally specific statement: a dish so associated with the Danube valley that it functions as both meal and identity.

The wine cellar is exceptional: Austrian Grüner Veltliner from Weingut Wachau and Franz Hirtzberger sit alongside a rare selection of old-vintage Burgundy and Barolo. The sommelier's guided pairing — thirteen glasses across the full menu — is one of Vienna's most educational wine experiences.
