About Montauk Seafood Grill

Montauk Seafood Grill has flown fresh fish into the Rockies since 1987, which makes it one of the longest-running independent restaurants in Vail's Lionshead Village. The pitch is simple and it has not changed: coastal seafood, a raw bar, and a warm room a short walk from the Eagle Bahn gondola. In a resort town where restaurants turn over with the seasons, Montauk's longevity is its own argument, and the kitchen still treats the fish with respect.

The Kitchen

The kitchen is run by executive chef and partner Dimitri Souvorin, who joined Montauk in 1997 and worked his way up from the line. The signature is seared ahi tuna, alongside a miso-glazed Chilean sea bass and a raw bar that builds to a $198 chilled seafood tower stacked with East and West Coast oysters, Alaskan king crab, and a Maine lobster tail. A grilled lobster tail runs about $44, and most mains land between $40 and $55.

The dated proof is the calendar: open since 1987 and reviewed by The Infatuation, which still sends people up the hill for the oysters. It sits among the best seafood restaurants worldwide; for the wider scene, read the full Vail dining guide or our guide to the best restaurants in Vail.

The Room

The room is mountain-casual and candle-warm, dark wood and a busy raw bar, with the noise of a full après-ski crowd rather than a hushed dining room. Tables are close enough to feel lively, which suits a group, and the bar seats are the move for solo oysters and a glass of wine. Dress is whatever you skied in cleaned up a little; nobody needs a jacket. It is steps from the Lionshead gondola, so timing it around the last chair is easy.

Best for a Birthday

Book Montauk for a birthday because the chilled seafood tower is a centrepiece that does the celebrating for you. It lands on the table stacked with oysters, king crab, and lobster, and a group can graze through it while the kitchen fires the ahi and the sea bass. The room is loud and warm in the right way for a party, the location off the gondola makes it an easy meeting point after a day on the hill, and the bar can keep the night going. Reserve a few days out in peak weeks and ask for a larger table.

Not for

Not for a quiet, romantic tasting menu. Montauk is a busy après-ski room with a loud raw bar; the energy is the point, and intimate it is not.

Frequently Asked Questions

Is Montauk Seafood Grill worth it?

Yes, if you want reliable coastal seafood in the mountains. Montauk has flown in fresh fish since 1987, and chef Dimitri Souvorin's ahi tuna and raw bar are the draws. Vail prices apply, and the $198 seafood tower is a splurge, but for a group dinner or a birthday off the gondola it delivers consistently. Set expectations for a lively room, not a fine-dining hush.

How hard is it to book Montauk?

Easy in the off-season, harder during ski-season holidays. Reserve a few days ahead for peak weeks around Christmas, Presidents' Day, and spring break, and aim for the early or late seating to dodge the après rush. Book through the Montauk site or by phone. Bar seats are usually available for walk-ins if the tables are full.

What is the dress code at Montauk?

Casual to smart-casual. This is a ski-town restaurant, so cleaned-up base layers and a fleece are entirely normal at the bar. For a birthday dinner most people dress a notch up, but nobody needs a jacket. Comfort wins after a day on the mountain.

What should I order at Montauk?

Start at the raw bar with East and West Coast oysters, then order the seared ahi tuna, which is the signature. For a group, the $198 chilled seafood tower with king crab and lobster is the move. If you want something hot and rich, the miso-glazed Chilean sea bass is the pick. A grilled Maine lobster tail runs about $44.

Diner Reviews

Greg M.February 2026
Occasion: Team Dinner

Brought eight of us off the gondola for a team dinner. The seafood tower disappeared in minutes and the ahi was cooked exactly right. It is loud and busy in February, which was fine for our group but would be wrong for a quiet date. Book ahead in peak week or you will not get a table.

Dana L.March 2026
Occasion: Birthday

Did my husband's birthday here after a powder day. The oysters were pristine for a landlocked town and the sea bass was the best dish. Pricey, but it has been here since the 80s for a reason. Ask for a table away from the bar if you want to hear each other.
