The Verdict
Room4Dessert is the dessert-only tasting-menu restaurant that American chef Will Goldfarb opened in Ubud in 2014, after closing his much-loved Manhattan original in 2007. Goldfarb — previously the pastry chef at Jose Andrés's Minibar, trained at El Bulli — is one of the subjects of Netflix's Chef's Table: Pastry series, and Room4Dessert is the rare restaurant that arrived in a global food-media spotlight before earning the conventional recognition most destination restaurants spend years chasing.
The format is unusual. The evening is structured across three spaces in the restaurant. It begins in the front garden with a flight of savoury snacks — technically hors d'oeuvres but designed as palate preparation for what follows. Diners then move to the main room for five plated desserts, each tied to a narrative or seasonal concept: a tropical-fruit sphere built around Bali passion-fruit, a nitrogen-shocked coconut-cream preparation, a cacao course that uses single-origin Balinese chocolate in four different forms. The evening closes in the rear pavilion with a selection of handheld petits fours and a small final sip.
The degustation runs approximately two hours and is typically paired with either wine (a selection of natural French producers and grower champagne) or with the restaurant's original non-alcoholic pairings, which use fermented fruit juices, house-infused teas, and milk-based drinks that have become one of Goldfarb's signatures. The dining room is small — seating perhaps twenty-four diners across the three spaces — and the service is unusually interactive.
Room4Dessert remains one of the very few restaurants in the world dedicated entirely to a dessert tasting menu, and it remains Ubud's most original dining concept. Returning diners schedule visits months in advance; first-time visitors frequently describe it as the most creatively surprising meal they had in Bali.
