World-Class Cooking in the Jungle

Wild opened in December 2016 on Tulum's beach road and spent years earning a reputation as one of the most ambitious kitchens on the Riviera Maya. The 2024 and 2025 Michelin Guide Mexico recommendations confirmed what regulars had known for years: this is cooking that belongs on a global stage, delivered from a dining room with no walls, no ceiling, and the Tulum jungle as its permanent backdrop.

Executive Chef Norman Fenton arrived at Wild with serious credentials — his cooking at sister restaurant Cariño in Chicago earned a Michelin star in December 2024, making him one of the most decorated chefs operating in Mexico's Yucatán. His approach at Wild is described as international cuisine with a Mexican twist: European and Asian techniques applied to the extraordinary ingredients available in the Yucatán peninsula, with a commitment to local, sustainable sourcing that goes beyond marketing language into genuine practice.

The Tasting Menu Experience

Wild's flagship offering is the 9-course Tasting Menu, available every Monday (Tasting Menu Monday) as a special weekly culinary journey and featured throughout the regular dinner service. The menu travels through Mexico's ingredient landscape with international confidence — a Japanese-influenced aguachile; a European reduction technique applied to slow-cooked Yucatecan pork; a dessert that uses cacao in its ancestral Mayan form rather than its European confection. Nine courses, approximately three hours, and the jungle changing character around you with every passing course.

The dining room is entirely open-air, set between the trees near the Nomade and Casa Malca hotels with parking available on both sides. Tables are set under a canopy that filters Tulum's tropical light into something cinematic by day and disappears entirely after dark, leaving diners with nothing above them but stars. The wine list is strong, international, and knowledgeable; the cocktail programme matches the kitchen's ambition.

Why Wild for a Birthday

Wild's energy differs from Arca's intensity or Hartwood's romance — it is more celebratory, more open, more suited to a group wanting to mark a significant occasion with exceptional food and an atmosphere that can shift from refined to festive. The outdoor setting accommodates larger tables well. The 9-course format creates natural conversation anchors between courses. The quality of cooking ensures the evening feels extraordinary. Book the chef's table for birthday celebrations with advance notice — the kitchen will acknowledge the occasion appropriately.

Practical Notes

Wild is located between the Nomade Hotel and Casa Malca Hotel on the Tulum beach road — two parking lots available, less than two minutes' walk from the restaurant. Birthday
Tasting Menu Monday for my wife's 35th. Chef Fenton's XO sauce course made me question every meal I've eaten in the last decade. The ambience — the jungle literally overhead, candles catching the wind — is the best setting I've experienced outside of Tokyo. The Michelin distinction is entirely deserved. We're already planning the return.

Took a hospitality client from London who has eaten at every notable restaurant in Europe. She rated Wild above her last meal at L'Arpège. The combination of Fenton's genuinely Michelin-level cooking and the absolute impossibility of the setting — open air, jungle, no walls — is something that simply cannot be replicated. Client relationship transformed. Invoice paid promptly.
