About Organique Josper

The Josper is a Spanish-made combination oven and charcoal grill, sealed to create a chamber of intense, dry heat at temperatures that most conventional ovens cannot approach. It is the tool of choice in the kitchens of Asador Etxebarri in the Basque Country and a generation of fire-obsessed chefs who understand that the relationship between flame and protein is not a technique to be improvised. Organique Josper brought one to Tbilisi, installed it in Vera, filled it with organic Georgian produce, and produced something that did not previously exist in the city: a restaurant where serious grill technique and the flavours of the Georgian highlands occupy the same plate.

Gault&Millau, the French restaurant guide that operates a Georgia edition, has recognised Organique Josper — a distinction that matters in a country where the international food press is only beginning to arrive in force. The recognition is deserved. The kitchen operates with a clarity of purpose that is uncommon: everything here is cooked over charcoal, sourced from certified organic Georgian farms, and presented without the kind of contemporary-restaurant fussiness that can obscure rather than illuminate what the ingredients can do.

The beef cuts are ordered by weight and arrive medium-rare unless specified otherwise; the demi-glace sauce that accompanies them is made in-house from long-cooked bones. The T-bone, when available, is a substantial commitment and worth making. The ribs have built their own following among Tbilisi’s regular dining crowd. The vegetable plates — grilled whole over charcoal with Georgian herb oils — are not afterthoughts; they are serious cooking that reveals what heat can do to an aubergine or a courgette that a pan never could. The pumpkin soup, finished with seeds and cream, is a consistent standard-bearer for the beginning of the meal.

For a team dinner, Organique Josper delivers exactly the right combination: a menu that everyone can find their way through, generous portions that encourage sharing, a wine list of organic Georgian wines that run from simple house choices to serious regional selections, and enough culinary credibility to feel like an intentional choice rather than a default. For closing deals, the quality of the food and the relative discretion of the setting — not flashy, but clearly excellent — communicates good taste without performance. The Vera location, in the creative dining neighbourhood adjacent to the Stamba Hotel cluster, makes this one of the most well-placed addresses in the city for a working dinner.

The cheesecake and the pear pie are worth saving space for. At this price point, both are generous and carefully made. Order the house wine by the carafe and work through the sharing dishes: this is a restaurant that rewards a relaxed, extended approach to eating rather than a rushed two-course format.
