The Verdict

Le Plat is the nine-table French bistrot that has become, by quiet consensus, Taichung's best-value serious restaurant. Chef Angela Liao — previously recognised on the Asia's 50 Best list as a rising female chef — opened Le Plat in 2019 in a short pedestrian lane near the National Taichung Theater, and the restaurant has operated since at the exact inflection point between neighbourhood bistrot and aspirational fine dining.

The menu is structured, unusually, as both à la carte and tasting — a concession to Taichung diners who wanted Liao's cooking without the full formal commitment of a tasting-only format. Liao's signatures draw from the French bistrot canon refracted through Taiwan's ingredient access: a confit duck leg over Puy lentils cooked with Taiwanese black garlic; a seared foie gras served with Yilan dragon-fruit compote; a sole meunière using locally caught flatfish that rivals anything the Channel coast produces.

The room is small and warm — exposed brick, low lighting, a zinc-topped bar where solo diners are actively welcomed and typically enjoy a three-course experience without reservation. The wine list is tightly edited, predominantly French, with a small but thoughtful natural section and a glass programme that rewards staying through the meal.

Le Plat was included in the Michelin Guide Taiwan's main selection in 2024 and 2025 without a star, and Liao has said publicly that she has no interest in chasing a starred format — the restaurant's scale and ethos would, in her view, change irreparably under the pressure. That position has only deepened local affection for the room.
