About L'Esprit
L'Esprit is the chef-driven dining institution of Jean-Claude Dufour — opened in 2010 in the Saline beach quarter, in a converted Caribbean-bungalow with a tropical garden setting — and is one of St Barths's most reliable mid-tier serious-occasion dining rooms. Dufour trained in Burgundy and at Le Bristol Paris before moving to St Barths.
The cuisine is contemporary French-Caribbean with deep regional sourcing. Signatures include a Caribbean-lobster bisque with chablis; a slow-cooked Caribbean goat with West-Indian spices; a hand-cut Caribbean tuna tartare with finger lime; a wood-fired Caribbean snapper; the famous 'tarte tatin Caraïbe' — a Caribbean-pineapple-and-rum tarte Tatin.
The wine list runs to 350 references with deep French Champagne and Burgundy coverage. The cocktail bar runs a serious Caribbean-rum programme.
The dining room and tropical-garden terrace together hold sixty covers. Service is family-run.
