About Sand Bar
Sand Bar is the all-day signature dining room of Eden Rock St Barths — the iconic 1950s rock-built hotel on Baie de Saint-Jean, opened by 1953 by aviator Rémy de Haenen and currently in second-generation Matthew-and-Anna-Gosselin-de-Lévis ownership — and is the canonical Eden Rock dining experience under consulting from Jean-Georges Vongerichten (the celebrated French chef of Jean-Georges New York and Jean-Georges Bel-Air, with five Michelin stars across his global empire).
The cuisine is contemporary French Caribbean with deep Vongerichten signature sourcing. The all-day programme runs from sunrise croissants through long rosé lunches to golden-hour dinners. Signatures include a Caribbean-lobster salad with passionfruit; a Vongerichten signature 'tuna ribbons' with avocado and cucumber; a hand-cut Caribbean snapper tartare with finger lime; a wood-fired Caribbean langoustine with samphire; the famous 'Eden Rock chocolate cake' for the dessert course.
The wine list runs to 700 references with deep French Champagne and Provençal-rosé coverage and a tightly chosen Burgundy section. Sommelier Sebastian de Carvalho runs the floor.
The dining room and beach-front terrace together hold a hundred and twenty covers; the western terrace is the experience, with feet practically in the Saint-Jean beach sand. Service is Vongerichten-precision.
