Diavola Pizzeria & Salumeria

Diavola occupies a century-old brick building in the small Sonoma County town of Geyserville, halfway between Healdsburg and Cloverdale on the Alexander Valley corridor. From the outside it looks like a historic saloon — which is essentially what it was. Inside, the Wild West meets northern Italian with a confidence that suggests no one involved found this combination strange. Vintage film posters line the walls. Antique tools hang from the ceiling. The wood-burning oven radiates heat and the smell of charred dough from the moment you walk through the door.

The salumeria program is the kitchen's signature: meats cured in-house, sourced ethically and locally, changing with what is available and what the curing room has been producing. The daily salumi board is not an afterthought — it is a demonstration of a serious preservation practice and the foundation on which the rest of the meal rests. Prosciutto, soppressata, lardo, whatever the kitchen has been working on: the quality speaks directly to the sourcing and the patience required.

The pizza is Neapolitan in philosophy and Californian in execution. The dough is fermented long enough to develop flavour rather than just rise. The wood-burning oven operates at the temperature that produces the leopard-spotted crust and the slight char at the cornicione that distinguishes genuine Neapolitan pizza from its imitations. The Diavola pizza — spicy sopressata, tomato, mozzarella, chilli oil — is the house statement. The prosciutto e funghi is the more classical expression. Both justify the drive north from Sonoma proper.

The handmade pasta section of the menu is where the kitchen crosses culinary borders most deliberately: potato gnocchi with Dungeness crab, pappardelle with seasonal ragu, stuffed zucchini flowers that reflect the afternoon's farm delivery. The specials change daily, and checking what arrived before ordering is always worthwhile. The wine list draws intelligently from Alexander Valley and the broader Sonoma County, with Italian selections that understand how well Sangiovese pairs with wood-fired food.
