The Verdict

PRELUDIO operates on a premise unique in Singapore's dining landscape: each year, Chef Fernando Arevalo sets a single theme for the restaurant's menus, and every preparation is developed in response to that theme. Previous chapters have explored Monochrome, Time, and the author's own culinary autobiography. The effect is a restaurant that feels simultaneously like a first visit and a continuation of a longer conversation — the theme provides coherence across courses in a way that conventional tasting menus achieve only occasionally.

Arevalo trained in classical European kitchens and brings a Colombian perspective to the Italian flavour sensibility that underpins much of his cooking. The pastas are handmade and precise. The sauces demonstrate classical French technique applied to ingredients from Southeast Asia, South America, and Southern Europe in proportions that shift with each annual chapter. The current year's menu is the most self-referential Arevalo has attempted — a retrospective of the restaurant's previous chapters, expressed as a series of dishes that recall earlier themes through the lens of what he has learned since.

One Michelin star since 2019 reflects a consistency that the annual-reinvention format makes genuinely difficult to achieve. The restaurant's forty seats and the intensity of the chef-driven approach create an intimacy that Tanjong Pagar's growing cluster of independent restaurants has developed as a district identity. The wine list changes with the menu themes and includes a pairing programme that is more adventurous than most Singapore starred restaurants attempt.
