The signature dish is the Kalam Polo Shirazi at $18 — the city's invented dish, an aromatic herb-filled rice dish layered with cabbage and small meatballs (lamb-and-rice mince with onion, garlic, mint, and Shiraz-specific spice blend), served with the traditional Persian tahdig (crispy-rice-bottom) and a small dish of mast-o-khiar yogurt-cucumber on the side. The premium Kalam Polo Special with extra meatballs and additional Shiraz-style accompaniments runs $26.
