Soofi Traditional Restaurant is one of Shiraz's most-recommended mid-range Persian-traditional dining rooms. The kitchen specialises in Shirazi cuisine in casual format, kalam polo Shirazi as the standout dish, a wider Persian-classics menu, exceptional customer service that's noted by Tehran-Shiraz food press, and prices noticeably lower than the higher-end Sharzeh and Haftkhan alternatives.

The signature is the Shirazi Kalam Polo at $14, a fragrant and flavourful rice dish cooked with cabbage and small meatballs, served with tender lamb on the side, the tahdig crispy rice base, and a small dish of mast-o-khiar yogurt dip. The Soofi version is slightly less aromatic than Sharzeh's (the kitchen uses a more straightforward herb mix) but the price-quality ratio is the city's clearest mid-range option for the dish.

Beyond kalam polo, the menu has the standard Persian classics: Mixed Chelo Kabab ($18), Khoresh-e Ghormeh Sabzi ($16), Khoresh-e Bademjan ($14), Tahchin ($16), Mirza Ghasemi smoked-eggplant ($10), and a few Shiraz-specific salads (Salad Shirazi, cucumber, tomato, onion, dressed with lemon and dried mint, is the regional standard). A meal of three Persian classics for two runs $40-55.

The room seats sixty across a single ground-floor open dining hall plus a small upstairs section. The atmosphere is casual-traditional, wooden chairs, local Persian carpets on some walls, hand-painted Persian-miniature framed prints, friendly service that's notably attentive (this is the kitchen's central reputation differentiator). Walk-ins always work outside Persian-New-Year peaks; reservations are useful for groups of six or more.
