The lamb comes from small farms in the Kinnaur valley. The trout is mountain-stream caught. The vegetables are sourced from kitchen gardens that have been supplying the town's hotels since the British era.
The dining room is small enough to feel intimate and large enough to accommodate a group celebration without crowding: twelve to fifteen tables, positioned around a central fireplace that runs from October to April. The walls hold vintage Shimla photographs and original Raj-era maps.
