About Wooyong

Wooyong is chef Kim Wooyong's twelve-seat tribute to royal-court Korean cuisine — the dishes Joseon kings actually ate, researched from palace archives and reconstructed using contemporary technique. The dining room is sparse, the focus entirely on the food. One Michelin star confirmed in 2022; many critics consider it underrated.

The set menu unfolds slowly — twelve courses across two and a half hours. Standouts include suyuk (slow-poached pork with house-made gochujang), gujeolpan (a nine-section platter of seasonal vegetables and pancakes), and a dry-aged hanwoo course finished with a clarified jang reduction that takes three months to produce. Every fermented condiment is made in-house.

Service is formal, gentle, and educational — staff explain each dish's historical reference and the technique used. Many courses arrive in lacquered ceremonial vessels modelled on palace originals; the experience is closer to a museum tour than a restaurant meal, in the best possible sense.

Bookings via Catch Table four weeks ahead. The kitchen offers a beverage pairing of traditional rice wines and aged makgeolli that is excellent and should not be skipped. Dress is smart-casual; foreign clients consistently rate the experience among Seoul's most memorable cultural dinners.
