Pierre Gagnaire à Séoul opened on the thirty-fifth floor of the Lotte Hotel Seoul in 2008 and has been the most polished French dining room in the country ever since. The Paris-based chef Pierre Gagnaire — three Michelin stars at his eponymous Rue Balzac restaurant for over twenty-five years — directs the menu and visits Seoul several times a year. Day-to-day execution is by head chef Frédéric Eyrier, who has been in residence in Seoul for over a decade and knows the local produce as well as any French chef in the country.

The cuisine is classical Pierre Gagnaire — multi-component plates that arrive in groups of three or four, each composition exploring a single ingredient through different preparations. A Gagnaire signature might be a single langoustine presented four ways: roasted, in tartare, in a velouté, and in a crystallised reduction, all served simultaneously. The technique is among the most rigorous in the world; the wine pairing — drawing on one of the most serious cellars in Korea — is exceptional.

The room itself is the secondary attraction. Thirty-five floors above central Seoul, the dining room looks out across the Bukhansan mountains to the north and the Han River to the south. At sunset and into evening service the view changes constantly. The service is the most polished in the city — a brigade trained to European hotel standards under a Korean general manager whose attention to detail is exceptional. From ₩250,000 the price is among the highest in Seoul but for an experience of this calibre with a thirty-fifth-floor view, the value is reasonable.
