Kim's approach is described by Michelin as a "calm and thoughtful interpretation of contemporary Korean cuisine," a phrase that understates the discipline and restraint behind each course.

The menu changes with the market, rotating around Korean seasonal produce: spring bamboo shoots from Damyang, summer perilla from Jeolla, autumn ginkgo and chrysanthemum from mountain foragers, winter root vegetables from Korea's southern coast. The eight-course tasting menu runs through roughly two and a half hours, each course brief but deliberate. Kim has built a strong foundation in fine dining both domestically and at international kitchens before returning to Seoul to open this room.

The dining room is minimal without being sterile — warm lacquered surfaces, soft brass lighting, twelve covers at most. The sommelier programme centres on Korean makgeolli and natural Korean wine alongside a concise French selection that complements rather than competes with the food.

Le Dorer is not yet known to the broad dining public, which makes it valuable to those who prize discovery. The reservation window is typically two to four weeks, relatively accessible for a starred Seoul restaurant.
