About Akelarre

There is no restaurant in Spain with a more dramatic address. Perched on the slopes of Monte Igeldo above the western edge of San Sebastian, Pedro Subijana's three-star sanctuary looks directly over the Cantabrian Sea — an unobstructed panorama of water and sky that changes colour with the hour and makes every table by the window feel like the best seat in Europe. The hotel that now wraps around the restaurant, a five-star property that opened in 2017, has only amplified the effect. Arriving as a hotel guest and waking to that view before dinner is one of the great luxury experiences on the continent.

Pedro Subijana has been cooking on this hillside since 1970. He was one of the architects, alongside Juan Mari Arzak and Martin Berasategui, of the New Basque Cuisine movement that transformed not just Spanish cooking but European gastronomy. Akelarre has held three Michelin stars since 2007, and the cooking remains in perpetual motion — Subijana's curiosity, at an age when most chefs have long since stopped asking questions, is what makes this kitchen extraordinary.

The cuisine at Akelarre is playful and technically rigorous in ways that complement rather than compete. A recurring approach is the transformation of familiar Basque ingredients — hake, spider crab, txangurro, idiazabal cheese — through unexpected techniques that make them simultaneously unrecognisable and deeply familiar. Subijana calls this approach "roots and wings": the terroir of the Basque Country expressed through a cooking philosophy that refuses to be constrained by it.

The eight-course tasting menu, at €195 without wine pairing, is amongst the most competitive pricing of any three-star restaurant in Western Europe. Wine pairing adds a further €95, and the cellar does justice to the kitchen — strong in Rioja, outstanding in txakoli, and genuinely adventurous across the international selection. The private dining room, the Sala Pedro Subijana, accommodates up to twelve for the most discreet celebrations in the region.

The most common feedback from guests who have proposed at Akelarre is that they had not planned to do it at that moment — the view made the moment inevitable. At sunset in July, with the Cantabrian Sea turning amber below the window and eight courses of some of Europe's finest cooking arriving in careful sequence, the question that has been prepared for weeks finds the only possible answer. Book the table by the window. Tell the sommelier in advance. Arrange the ring with the maître d'. The hotel suites above the restaurant mean the evening need not end with a taxi. Of all the places in the Basque Country to ask the most important question of your life, Akelarre is the answer that requires no deliberation.
