The Verdict
Cum Quibus occupies a stone townhouse on Via San Martino, inside San Gimignano's walled centre. Chef Alberto Sparacino — who cooked at Arnolfo with Gaetano Trovato and at Daniel Boulud in New York — runs the kitchen with patron Lorenzo Di Paolantonio out front, in a room of barely a dozen covers and a small internal courtyard.
The current carte opens with the kitchen's emblem, Mezzovo (a velvety egg yolk, Pienza pecorino foam and fresh truffle, €24), and runs through homemade pappardelle with Tuscan wild boar and the dessert "Tiramisù, Properly Done." The tasting menu is €70, with an optional wine pairing at €50, and is served identically for the whole table; à la carte mains sit around €26–29 (current menu).
Cum Quibus earned its first Michelin star in 2017 and built San Gimignano's strongest fine-dining reputation. Within the same Make Eat Nice group, the current Michelin star (2025) is now held by sister restaurant LINFA, while Cum Quibus continues as the group's Tuscan-tradition room.
Why It Works for a Proposal
A tiny medieval room, candlelight, a courtyard for warmer nights and a tasting menu paced for a long evening make Cum Quibus one of Tuscany's most intimate tables. Book ahead and mention the occasion; the small kitchen tailors the menu and the pacing to the table.
Who It's Not For
Not for big groups or spontaneous walk-ins — the room is tiny, the tasting menu is served to the whole table, and a credit-card guarantee is sometimes required, so reserve well ahead. Skip it if you need fully vegan cooking, which the kitchen says it cannot accommodate, or if you only want a quick, casual bite.
