About Quintessenza
Quintessenza sits a short walk from Trani's Romanesque cathedral and old port and has held a Michelin star since 2015. The kitchen is run by brothers Stefano and Domenico Di Gennaro (savoury and pastry respectively) and leans into Trani's coastal position: whole Adriatic fish, raw shellfish platters, seafood pastas, and the Murge uplands inland supplying the vegetables and meats that complement.
The tasting menus run at four, six, or eight courses; the a la carte is fuller than most starred Apulian rooms and allows a table to order three classically-structured courses without missing the kitchen's voice. Signatures include a raw Gallipoli red-prawn with burrata cream, tagliolini with sea urchin and lemon zest, and a whole turbot in potato scales for two to share.
The dining room is 40 covers across two spaces and presents as contemporary-elegant — linen-covered tables, well-spaced seating, soft directional lighting. The atmosphere is quieter than Pasha's and more conservative than Bros'; the room is calibrated for the sort of dinner where the food is the event but not the entire event.
Trani itself is a date-appropriate setting: the cathedral square is among the most beautiful in southern Italy, the old port is walkable, and the short drive from Bari airport makes it manageable for a weekend visit. Quintessenza's location off the main square rather than on it keeps the setting intimate.
Best Occasion Fit
First dates reward rooms where the setting does the work of establishing significance without forcing formality. Quintessenza's Trani cathedral-square location, coastal-elegant dining room, and a la carte flexibility (important on a first date — committing to an eight-course tasting together is a second-date decision) make it the region's most usable date restaurant.
