About Antichi Sapori

Antichi Sapori operates out of a converted farmhouse in the village of Montegrosso, 10 kilometres inland from Andria in the Murge uplands. Chef Pietro Zito grows 80% of the vegetables served in the restaurant on his own land behind the building and sources the rest from neighbouring farms. The cooking is traditional-Apulian in a way that has almost disappeared elsewhere: hand-rolled cavatelli, lamb slow-cooked in tomato and wild herb, fava-bean puree with chicory, and the region's cheeses at their simplest.

The Michelin guide lists Antichi Sapori in the 'recommended' category rather than awarding a star — the restaurant's format (communal tables, no tasting menu, family-style service) doesn't fit the star framework, which is its own kind of endorsement. Zito's influence on the broader Italian farm-to-table movement has been significant; he is among the chefs who defined the category before it had a name.

The room is low-ceilinged, stone-walled, and lit by candles and a central fireplace. Tables are wooden farm tables; the flatware is unmatched in the best rural-Italian way. Service is family-run: Pietro's wife and children work the floor, and the sense of hospitality is the kind that international chain restaurants cannot manufacture.

Prices are extraordinary — a full dinner with house wine runs 40-55 EUR per person. For solo dining, the communal table format removes the awkwardness of dining alone; you will be seated among other travellers and will almost certainly end the meal with new friends.
