About Dejuyuan Restaurant

De Ju Yuan (德居源) is a famous restaurant in Pingyao Ancient City that serves traditional Shanxi cuisine — known for its delicious noodles, especially the Pingyao beef noodles. The kitchen has been serving authentic and clean Pingyao snacks for decades, including Wantuze, Pingyao beef, Long potato, Kaolaokao, as well as 100+ other genuine Shanxi snacks. The restaurant is the city's most-cited single Shanxi-cuisine destination.

The signature is the Pingyao Beef Noodles (¥35) — the regional aged-and-spiced beef sliced thin and served over Shanxi knife-cut noodles in a clear beef-bone broth with the regional Shanxi-vinegar splash. The Pingyao beef itself is the dish's central signature: the beef is slow-marinated in a specific Pingyao-region spice blend (Sichuan peppercorn, star anise, fennel, ginger, soy, Shanxi vinegar) for 24 hours, then slow-cooked for 4-6 hours, then sliced thin against the grain for the noodle-bowl preparation.

Beyond beef noodles, the kitchen serves the wider Pingyao classics: Wantuze (¥18) — the regional buckwheat-based gel served cold with vinegar-soy-chili dressing (the texture is similar to silken tofu but more elastic); Long Potato (¥22) — the Shanxi long-strip potato preparation, similar to French fries but with regional Shanxi spice; Kaolaokao (¥16) — the small triangular-folded pasta dumpling served in a clear broth; a wider snack platter (¥45) with five small Pingyao-region preparations. A meal of three Pingyao classics for two runs ¥120-180.

The room is comfortable Shanxi-traditional style. Forty seats across two floors with bay windows facing Ming-Qing Street pedestrian flow, decorative Shanxi-traditional architectural touches, low-set tables in some sections. Walk-ins outside the 12-2pm lunch peak work; the queue at peak runs ten to fifteen minutes. Cards are accepted; English picture menus are present and the staff speak basic functional English.
