About Adrián Quetglas

Adrián Quetglas opened his own restaurant on Paseo Mallorca after years cooking in Moscow under Adrià-trained chefs, and his Michelin star arrived almost immediately. The room is unfussy — pale wood, white linen, a long banquette — and the kitchen is open enough to watch from any seat.

His cooking sits at an unusual crossroads. The base is Mediterranean and Mallorcan, but Quetglas's years in Russia and his training under the Catalan avant-garde show through in unexpected places — borscht reductions, smoked trout with crème fraîche, a celebrated white peach gazpacho that recurs each summer. The tasting menu is among the most generous-value Michelin offerings in Spain.

The wine list is short but thoughtful, with a focus on small Spanish producers and a clutch of natural wines from Mallorca itself. Service is warm and entirely unstuffy — the sort of meal that puts a first-time fine-diner immediately at ease without sacrificing any of the precision in the food.
