The oyster programme is serious: carefully selected, correctly dressed, served at the temperature that preserves their character rather than merely their safety. The ceviche operates across a range of preparations — classic Peruvian with leche de tigre, Mexican with avocado and serrano, seafood cocktails built with the restraint of someone who has eaten in the best cevichemias in Ensenada and is not trying to impress anyone by adding unnecessary complexity to something already perfect.

I grew up eating ceviche in Lima and I have spent two decades being disappointed by American imitations of it. Crudo is not an imitation of anything. The ceviche is precise — the acid level, the cut of the fish, the heat from the pepper — and the oysters were the best I have had outside of a French oyster bar. I sat at the counter alone for two hours and I ate too much and I would do exactly the same thing again tomorrow.

Took a first date here because the sharing format takes all the pressure off and raw bars create an immediate shared experience — you are both discovering the same thing at the same time. The oysters arrived correctly dressed, the ceviche was exceptional, and the conversation was easy in the way that only happens when the food is good enough to talk about.
