The signature is the Estate Tea Tasting Flight ($12 per person) — a structured tea-tasting where guests compare three to five single-estate Ceylon tea grades (the Pedro Estate's Pekoe, BOPF, FBOP, plus seasonal selections), with a trained tasting staff explaining the differences in flavor, aroma, and processing. Each flight is paired with small Sri Lankan-tea-pairing snacks: tea-cured smoked salmon canapés, Ceylon-cinnamon shortbread, mini watalappam custards.
