Paul & Elizabeth's opened in 1978 inside Thornes Marketplace — the converted department-store building that has been the heart of downtown Northampton for four decades — and has run on the same broadly Japanese-influenced macrobiotic principles ever since. The dining room is bright and high-ceilinged with exposed brick, hanging plants, and large windows facing Main Street. The kitchen is open to the room and the wood-fired oven is in plain view. The mood is unfussy, warm, and entirely without pretension.

The cooking is pescatarian and vegetarian with a Japanese-influenced macrobiotic backbone: vegetable tempura with a fresh ginger-tamari dipping sauce, miso soup as a starter or a bowl in itself, brown-rice and grain bowls dressed with sesame and tahini, simply grilled fish (cod, salmon, monkfish) with seasonal vegetables, and a vegetable plate that has been on the menu since the opening week and remains the room's most-ordered item. Bread is house-baked from local stone-ground flour. The wine list is short, organic, and well-priced; the beer list runs through Massachusetts and Vermont craft.
