Qing Jia Mu occupies a specific position in Ningbo's dining ecosystem: it is the restaurant where the city's most distinctive culinary technique — the preservation and preparation of seafood through pickling, curing, and the drunken (rice-wine marinated) method — receives its most serious treatment.

Ningbo's seafood culture is shaped by history: a coastal city that needed to preserve fish before refrigeration created one of China's most sophisticated preservation traditions. The drunken crab (zuixie) is the centrepiece — blue crab marinated in Shaoxing rice wine, soy sauce, and spices for twenty-four to forty-eight hours, served cold, the flesh transformed from the raw original into something utterly specific to this city and this technique. Alongside it: drunken prawns (alive in the wine mixture, consumed immediately), pickled yellow croaker, dried and salted fish preparations, and fresh seafood served in the restaurant's more conventional style.

The room also serves the standards of the Ningbo repertoire: red-braised pork belly, poached drunken prawns (a different preparation, using warm rice wine), and seasonal vegetable dishes that reflect Zhejiang's agricultural richness.

Pricing: CNY 200 to 400 per person. The drunken crab (CNY 150 to 300 per crab) is the signature order.
