About Savva

Savva occupies the main dining room of the Hotel Metropol — a 1905 Art Nouveau palace across from the Bolshoi and 200 metres from Red Square. The stained-glass ceiling is the original, the marble columns are the original, and the room has hosted Lenin, Chaliapin, Rachmaninoff, and two centuries of Russian political and cultural life. Chef Andrey Shmakov runs one of the most technically accomplished kitchens in the country inside it.

The menu divides cleanly between modern Russian and classical European — venison with juniper and lingonberry, sturgeon with smoked sour cream, Norwegian halibut with Russian black caviar. The tasting menu follows the seasons. The à la carte lets guests compose a dinner around what they want the evening to feel like.

Service is the differentiator. Savva's dining room runs at a level that makes business conversation easy — pacing is controlled, the wine list is presented with genuine expertise, and the sommelier handles the kind of pricey-bottle decisions that matter when a client is watching. The room's sight-lines allow tables to speak without being overheard.
