Tambourine Room opened inside the Carillon Miami Wellness Resort on Collins Avenue in 2022 and won its Michelin star in 2023 — the only Mid-Beach restaurant currently holding the award. Chef Tristan Brandt, a two-Michelin-star veteran of the German and Swiss fine-dining scene, runs a tasting-menu-only kitchen of 28 seats.

The menu ($225-285 per person depending on configuration) is German-technique applied to a Mediterranean-leaning ingredient palette: hand-dived scallops, wild-caught local fish, a signature bouillabaisse service, and a cheese trolley sourced through a specialist importer. Pairings are available both as classical wine and as a non-alcoholic alternative programme.

The dining room is low-ceilinged, deeply residential in feel, and built around a single open kitchen pass that chef Brandt works from directly. Service is European-formal — multiple servers per table, plates delivered in unison, the entire experience paced to a three-hour arc that suits proposals and anniversary dinners.
