About Shingo

Shingo opened in Coral Gables on Aragon Avenue in 2022 from chef Shingo Akikuni — previously the chef at Naoe and before that at Nobu — and won its Michelin star the following year. The nine-seat hinoki counter is the only omakase-tier restaurant in Coral Gables and has become the default for Gables-based clients who don't want to drive to South Beach or Wynwood.

The format is classical Edomae at 17 pieces, running approximately two hours, with rice seasoned in-house and fish shipped twice weekly from Toyosu market. The chef's training at Nobu and Naoe shows in the ingredient discipline and the precision of the knife work; the format itself is orthodox rather than modernist.

The Coral Gables setting — a quiet off-Miracle-Mile block with valet parking and an adjacent wine bar — gives the restaurant a less-frenetic atmosphere than the South Beach equivalents. Pricing at approximately $235 per person is competitive for the Michelin tier.

Best Occasion Fit

Shingo is the Coral Gables omakase default. For solo dining, the counter format and the chef's fluent English make it one of the easier Michelin-tier rooms to eat at alone. For clients based south of downtown, it removes the South Beach traffic from the evening without sacrificing the Michelin credential.
