About Azafrán
Azafrán is the chef-driven dining room of Sebastián Weigandt — a Mendoza native, trained at El Bulli under Ferran Adrià — who took over the original Azafrán deli on Avenida Sarmiento in 2010 and built it into the city's most reliable contemporary-Argentine fine-dining room. The restaurant occupies a converted Belle Époque townhouse with original 19th-century terracotta floors, an open kitchen at the back, and seventy-two covers across two rooms.
Weigandt's cooking is contemporary Argentine with deep Andean-Cuyo regional sourcing. The four-course dinner tasting and the three-course lunch tasting both rotate seasonally; signatures include a hand-cut Andean lamb tartare with Andean potato; a slow-roasted Patagonian lamb shoulder with Andean herbs; a hand-rolled Andean potato gnocchi with Andean huacatay; the famous 'asado de tira al carbón' — Argentine short-rib over coal that Weigandt refined for over a decade.
The wine list is the deepest in Mendoza city — 1,200 references with serious Uco Valley Malbec coverage (Catena Zapata back to 1995, Achaval Ferrer, Cheval des Andes, Bodega Aleanna), a respectable Argentine-Chilean section, and a tightly chosen French and Italian section. Sommelier Carolina Magnasco runs the floor and the pairing flight at USD$45 is heavily Uco-Valley-led.
Service is family-run — Weigandt himself runs the kitchen and walks the room before the cheese course; the captains rotate from a year-round seasonal pool. Azafrán is the most reliable client-entertaining address in Mendoza city and the room hosts a generation of regional wine-industry dinners.
