About Pasta Zdravko

Pasta Zdravko opened in 2019 in a small stone-walled room on Vetrinjska, just behind the Lent quarter waterfront, and quickly became the working dinner reservation of choice for the city's full-time residents — a small but discerning constituency that includes most of the Old Town hospitality professionals. The room is intimate (thirty covers), the kitchen is open to the dining room, and the cooking runs the contemporary Italian-Slovenian register at a price the rest of Maribor's serious kitchens have not matched.

The cooking is precise and modern. Hand-rolled pasta, every shape made daily — agnolotti del plin with brown butter and Pohorje sage; ricotta and spinach ravioli with confit cherry tomatoes; carbonara made the Slovenian way with smoked Štajerska bacon; bigoli with Drava-river trout and capers; tiramisu the kitchen makes itself. The lunch menu prints two pasta dishes for €14; the dinner menu runs eight rotating plates.

The wine programme is short and well-curated — about 90 references, leaning into smaller Slovenske Gorice and Friulian producers rather than the famous Vinag bottles, with a serious Croatian Istrian section that the rest of the city does not stock. By-the-glass rotates ten bottles weekly. Mark-ups are fair, and the sommelier (also the chef) is happy to pour generous tastings for solo diners at the kitchen counter.

Pasta Zdravko is the city's most genuinely contemporary kitchen and the best-value serious dinner inside Maribor. The room fills nightly with locals and increasingly with international guests who have heard about it through the small Slovenian food press. Reservations have moved from same-day to one week ahead in the past twelve months.

Pasta Zdravko is the solo-dining counter Maribor needed. Six seats at the kitchen pass with a direct view of the cooking, a serious by-the-glass programme that rotates weekly, a chef happy to talk through the wine list, and a price point that does not require the per-course commitment of the Michelin rooms. For a wine-focused traveller passing through the city mid-week, this is the most rewarding solo dinner in Štajerska.
