The Verdict

The Chameleon Room is a 14-cover chef's tasting restaurant inside a restored Heeren Street shophouse, opened in 2020 by chef Jimmy Lim (formerly of Tatler Asia's 10 Best Malaysia and a stage at Noma). The dining room runs single-seating across the room — every diner sits at the marble counter directly in front of the open kitchen, and Lim and one sous chef cook the entire meal in front of the diner over a four-hour service.

The 12-course Modern Malaysian tasting menu (RM 580 per person, approximately USD 125) is the only offering. The menu rotates monthly but always includes a small set of signatures: the otak-otak ravioli (the chef's modernist take on the Malacca riverside snack); the rendang-glazed wagyu cheek (slow-cooked 36 hours, glazed with a 4-day reduction of the rendang sauce); the chap chye consommé (the Peranakan stew rendered as a clear broth with pickled mustard greens); and the gula melaka soufflé that closes every meal.

The room is BYOB-friendly with no corkage fee — the chef will pair from the diner's own bottles. Service is in English. Bookings open 60 days in advance; the room is single-seating only (no walk-ins, no à la carte) and the experience runs 4 hours from 7pm to 11pm.
