Fismuler arrived in Madrid's Barrio de las Letras in 2015 and established itself almost immediately as the city's most compelling neighbourhood restaurant. The team — veterans of the Spanish avant-garde who had decided that produce and season were more interesting than technique for its own sake — created something that has aged better than most conceptual restaurants of that era.
The menu changes with the market. The kitchen has a particular talent for vegetables — a wood-roasted cauliflower with smoked butter and capers; a salad of wild herbs and flowers that is both beautiful and deeply satisfying. The meat and fish are treated with equal care: lamb cutlets from the Sierra de Guadarrama; line-caught sea bass from the Cantabrian coast.
The room is high-ceilinged, warm-lit, and deliberately convivial. The open kitchen is visible from the bar, where some of the best seats are located. The wine list demonstrates intelligence: Spanish natural wines alongside classical references, by-the-glass rotated with the same attention the kitchen applies to produce.
