About Monstera Bistro
Monstera Bistro opened in 2017 at Gosposvetska cesta 9, a quieter side street five minutes' walk from the central Slovenska axis. Chef-owner Bine Volčič is one of the leading figures of the new generation of Slovenian chefs — formally trained in classical French technique, philosophically committed to micro-seasonal sourcing.
The format is unusual and disciplined: a single daily-changing tasting menu (no à la carte, usually four to six courses at €55–€85), driven entirely by what the morning delivery and the kitchen garden have produced. There is no advance menu published; the kitchen tells you what you are eating when the plates arrive.
The cooking is Modern Slovenian, technically French-anchored, and unusually vegetable-forward — Volčič is known for treating vegetables as the lead protein on at least one course of every menu. The wine programme is small and focused, with a strong natural and Slovenian register; the by-the-glass pairing is the right call.
The room takes around thirty covers across a single intimate dining space — exposed brick, oak, a chef's counter overlooking the open kitchen. Service is conversational and run by people who clearly love the project. Closed Sunday, Monday and Tuesday.
