The Restaurant

JTK Cuisine & Cocktails occupies a glass-fronted suite inside the restored Lincoln Station building at 201 North 7th Street, in the Haymarket district. The room itself is one of the most distinctive in the Midwest — high vaulted ceilings, original 1927 station fittings, a long marble bar facing the open kitchen, and tables spaced generously enough to allow real conversation. Sound carries well; the room feels formal without ever tipping into ceremony.

The cooking is New American steakhouse with a kitchen that takes itself seriously. The Nebraska Wagyu Filet — six ounces, dry-aged, served with a black-garlic demi-glace and a marrow-bone side — is the room's most-ordered single item and routinely cited as the best steak in the city. Beyond the Wagyu, the menu runs through dry-aged Nebraska ribeye, pan-roasted halibut with brown-butter capers, a confit duck leg with cherry gastrique, and a tasting of three appetisers — firecracker shrimp, truffle fries, and a tuna tartare — that has earned its own following. The kitchen handles a four-course tasting menu with the precision of a much larger metro room.

The wine programme is the quiet luxury and the reason JTK has been named in Wine Spectator's Award of Excellence list four years running. The list runs to around three hundred references with serious depth in California Cabernet, Burgundy village wines, and a small but very selective collection of Champagne and Italian whites. The sommelier walks the floor through the evening, the by-the-glass programme is large enough for a real flight, and the bar mixes one of the more ambitious cocktail programmes in Lincoln — a manhattan, a smoked old fashioned, and a barrel-aged negroni that has become the bar's calling card.
