Bazaar Meat, now at The Palazzo inside The Venetian after its move from the Sahara, is Jose Andres' carnivore theatre and the most ambitious steak room on the Strip. The whole suckling pig, the dry-aged cuts carved tableside and the cotton-candy foie gras are the order, with a Monday dinner running $90 to $200 a head. It opens Monday from five to ten. This is the room to book for a celebration or a deal you want to win; reserve the chef's counter to watch the fire, or a banquette for a long table. A Monday booking here is far easier than a weekend one.
