Kayuputi

Bill Bensley's over-water pavilion at the St. Regis — the most visually ambitious dining room in the Malaysian archipelago, paired with a modern Asian menu that treats tropical produce with serious fine-dining discipline.

The Experience

Kayuputi — the name refers to a white tropical hardwood endemic to the Malaysian forests — occupies a Bill Bensley-designed pavilion that sits on stilts over the Andaman Sea at The St. Regis Langkawi. The architecture is a studied reference to traditional Malay water villages, but scaled and detailed at a level no village kitchen has ever achieved: carved teak panels, copper lighting fixtures, ceiling fans turning slowly above tables dressed in cream linen, and the sea visible on three sides through floor-to-ceiling glass. At sunset — which Langkawi's west-facing coastline presents at a reliable 19:15 most of the year — the dining room glows in the colour of the horizon.

The menu is modern Asian with a deliberately fine-dining structure. The Kayuputi Culinary Experience (MYR 220 per person as a discovery platter for two) opens with crab meat eclairs, savoury macarons, and a series of small bites that establish the kitchen's technical range. Signature mains include the scallops with aged coconut, the roasted Atlantic cod in asam pedas (a spicy tamarind broth), and the asam pedas risotto — a carefully composed dish that marries Italian technique with Malaysian ingredient traditions and demonstrates, as well as any dish on any menu in Southeast Asia, how regional fine dining can work. The signature Sunset Cocktail — two martini glasses pre-chilled with a giant rosella ice ball, finished with tequila, Cointreau, lime juice, and mango — is ordered more frequently than any other drink on the list.

The service programme reflects the St. Regis standard. Butlers are assigned to tables of four or more; the sommelier, responsible for one of the deepest wine cellars in the region, is available for consultation on each course; the pace is calibrated to the sunset. The dining room has seating for sixty-four across the main space and twelve on a dedicated over-water terrace, which is the single most romantic dining spot on Langkawi. Private dining is available in a separate pavilion that seats up to fourteen — the configuration required for most proposal dinners and certain kinds of client entertainment.

Reservations for Kayuputi should be made at least a week in advance, and specifically the sunset seatings (19:00 and 19:30) should be booked two weeks in advance in high season (December–February). Non-resort guests are welcome but must arrange transport through the St. Regis concierge, which will coordinate arrival timing with the restaurant. The dress code — smart elegant, with jackets requested for men — is enforced politely but consistently. The MYR 280–450 per person range reflects the position and assumes wine pairings; à la carte dining can run lower.

Why it's perfect for Proposal

For a proposal in Southeast Asia, Kayuputi is among the two or three most consistently suggested restaurants in the region, and for good reason. The architectural setting — a Bensley-designed over-water pavilion, lit by lanterns and the sunset — provides a backdrop that removes all need for additional theatre. The dedicated private pavilion allows the proposal itself to happen in privacy; the main dining room's timing (the 19:15 sunset, the transition into the evening service) gives the moment a natural rhythm. The St. Regis infrastructure supports the entire evening: champagne on arrival, a suite arranged, private transfer back to the property.
