Nobu Lanai is the Four Seasons Resort Lanai's institutional Japanese flagship — chef Nobu Matsuhisa's Pacific outpost, with sweeping views of the Pacific Ocean and the Manele Bay coast. Nobu Matsuhisa is the celebrated Japanese-Peruvian-Los-Angeles chef whose 50-plus restaurants worldwide define modern Japanese fine dining.
The cuisine is Nobu's signature Japanese-Peruvian fusion. Diners can savour innovative Japanese cuisine with an option for an intimate and interactive 15-course teppanyaki dinner experience, or signature Nobu dishes made with fresh, locally sourced ingredients. Signatures include the famous 'black cod miso' (the canonical Nobu signature since 1987); 'tuna tartare with caviar'; 'yellowtail jalapeño'; the famous 'Lanai uni shooter' that uses local Hawaii sea-urchin; the 'ginger-glazed Hawaiian Wagyu'.
The sake list runs to thirty-plus daiginjo and junmai-daiginjo bottlings — the deepest sake programme in the Pacific. The wine list runs to 500 references with deep French Champagne and American-Pacific coverage.
