Alem's Kitchen — Ethiopian / Home Cooking, Lalibela

Alem's Kitchen is the kind of place that only exists at the intersection of local knowledge and genuine curiosity — a family home that has evolved, gradually and without pretension, into one of the most rewarding eating experiences in northern Ethiopia.

Alem herself cooks everything in the traditional manner: injera fermented for three days from teff grown in the surrounding highlands, stews slow-cooked over wood fires, spice blends ground fresh that morning. The result bears little resemblance to the Ethiopian food found in diaspora restaurants elsewhere in the world.

The coffee ceremony is the crowning experience. Green beans are washed and roasted in a flat pan over charcoal, ground in a wooden mortar, brewed in a clay jebena, and served in small handle-less cups with frankincense burning alongside. It takes forty minutes and is worth every one of them.

Portions are home-scale, which is to say enormous. Arriving hungry is strongly advised. Alem has a particular gift for explaining the cultural context of each dish, turning every meal into an education.
