About Umakatei
Umakatei is one of the half-dozen serious basashi-specialist restaurants on Shimotori arcade in central Kumamoto. The kitchen works exclusively with Kumamoto Prefecture-raised horse from a single Aso producer the family has used since the 1990s, and the menu is built around eight differentiated cuts of horse meat — front shoulder (akami), top loin (chuujou), fatty belly (toro), neck (suji), liver, heart, mane (tategami, the prized fatty mane meat), and a leg-cut tartare. The format is closer to a sushi counter than a steakhouse.
The signature presentation is the Basashi Tasting Flight (¥4,200) — eight thin-sliced cuts arranged on a single dark-wood platter with three accompaniment trios: Kumamoto-style (grated garlic, ginger, sweet-soy), Shanghai-style (chili-oil, scallion, black vinegar), and Italian-style (olive oil, sea salt, lemon). Beyond the flight, a basashi-don rice bowl runs ¥2,400 at lunch; a horse-meat sukiyaki for two is ¥7,500.
The room seats forty across two floors, with a counter facing the open prep station downstairs and small private booths upstairs. Reservations are useful on weekends; a week ahead is enough. English menus are detailed (basashi cuts are illustrated by which part of the horse they come from) and the staff are patient with first-time eaters who need the cuts explained.
What makes Umakatei worth the trip beyond the cheaper basashi izakayas is the freshness control — the horse is butchered the morning of service at the Aso producer's facility and arrives in Kumamoto by 10am. The cuts are at their best within four hours of arrival; the kitchen sells what doesn't move at lunch as a takeaway tartare so the dinner service starts fresh.
