Stari Mlini

Stari Mlini — 'the old mill' — occupies a restored 16th-century Venetian olive mill on the bay road in Ljuta, eight kilometres north of central Kotor. The setting is one of the most striking in Montenegro: a stone-vaulted dining room with the original olive-press wheel still in place, opening onto a stone terrace built directly over a clear-running spring that empties into the bay. The whole property is candlelit, Japanese-quiet and properly luxurious.

The cooking is among the most ambitious in the Boka — Adriatic fine dining with a clear modern hand. A signature dentex carpaccio with Boka olive oil and trout caviar. Slow-cooked octopus with Crmnica Vranac jus and confit Lovćen potatoes. Whole salt-baked Boka turbot, presented and filleted tableside. A wild-Lovćen lamb shoulder cooked under the traditional sač (embers-buried iron lid) for four hours and served with rosemary-roasted potatoes and bay-leaf jus.

The wine programme is the bay's most serious — a deep Montenegrin section (Plantaže Pro Corde and Stari Podrum reserves), proper Italian Friulian whites, an unusually broad Champagne list, and a small but careful natural-wine programme. The sommelier team handles a long dinner without leaning on the obvious.

Dinner with wine lands around 130 EUR per guest. Stari Mlini is the room you book in the Boka when the dinner has to do real work — a client, an anniversary, an occasion. The drive from Kotor takes twelve minutes.

Stari Mlini is the Boka room you book when a client has flown in and dinner has to leave them understanding that Montenegro is not a budget destination. The 16th-century olive-mill setting, the spring-fed terrace, and the seriousness of the cooking together create the impression that the Adriatic is producing fine dining at the level of the western Italian coast — which, on a good night here, it is.
