"Chef Suresh Pillai reworks Kerala's home cooking with London-trained finesse — Kochi's table to book when you want the state's flavours done with real polish."
About Restaurant Chef Pillai
Restaurant Chef Pillai opened inside Le Méridien Kochi in Maradu in 2022, the homecoming project of chef Suresh Pillai. An Indian-born British chef, Pillai spent fourteen years cooking in London — including spells at Veeraswamy and Gymkhana — and reached a wide audience as a finalist on MasterChef UK before returning to cook the food of his home state.
The menu reads like Kerala's home kitchens reworked with restaurant technique, drawing on South Kerala's roots, the aromatic traditions of central Travancore and the bolder tastes of the Malabar coast.
The Kitchen
This is modern Kerala cooking built on local produce. The signatures are well known: fish nirvana, the chicken puliyinji lollipop, and pal konju — prawns in a coconut-milk gravy. The meen curry with coconut rice and the duck roast platter are the plates regulars return for, and the kitchen has fun with fusion desserts like a reworked unniyappam and falooda.
Spicing is confident and regional rather than tempered for tourists, but the presentation carries the finesse of Pillai's London years.
The Room
The dining room is chic and contemporary — warm lighting, clean modern interiors — a clear step away from a traditional Kerala sadya hall. It is comfortable enough for a long dinner and smart enough for an occasion.
Service is polished in the hotel style, and the kitchen is happy to guide first-timers through the menu's regional spread.
Not for
Not for travellers after a cheap local thali or a quick street-food fix — this is a hotel restaurant at occasion prices, best for a sit-down dinner.
