About Restaurant Chef Pillai

Restaurant Chef Pillai opened inside Le Méridien Kochi in Maradu in 2022, the homecoming project of chef Suresh Pillai. An Indian-born British chef, Pillai spent fourteen years cooking in London — including spells at Veeraswamy and Gymkhana — and reached a wide audience as a finalist on MasterChef UK before returning to cook the food of his home state.

The menu reads like Kerala's home kitchens reworked with restaurant technique, drawing on South Kerala's roots, the aromatic traditions of central Travancore and the bolder tastes of the Malabar coast.

The Kitchen

This is modern Kerala cooking built on local produce. The signatures are well known: fish nirvana, the chicken puliyinji lollipop, and pal konju — prawns in a coconut-milk gravy.
