Chef Thomas Chien's eponymous restaurant is, by a comfortable margin, the most decorated fine-dining room in southern Taiwan. The dining room is all clean lines and low-key lighting; the kitchen turns out a modern French tasting menu that uses Taiwan's coast and mountains as its larder — line-caught grouper from Penghu, pork from the Pingtung highlands, mushrooms from the Alishan range.
The tasting is typically eight courses, and every course is plated with the precision you would expect of a chef who trained through three-star kitchens in France. The wine pairing is the sommelier's; request the longer pairing if you want a serious evening. Service is immaculate — genuinely, not the over-choreographed kind.
It is the city's default Impress Clients venue for a reason. The room is quiet enough for negotiation, the menu gives you eight natural conversation pivots, and a bill around NT$8,000 a head with wine is entirely justifiable on an expense report.
