Hua Hin — #1 in the City — Sister concept to Michelin-listed Jaras Phuket

Hua Hin Modern Thai $$$$

The Hua Hin outpost of the Michelin-listed Jaras Phuket concept — a Thai regional tasting kitchen inside the InterContinental, and by a wide margin the city's most considered plate of food.

About Jaras

Jaras Hua Hin is the regional-Thai tasting kitchen of chef Note, operated inside the InterContinental Hua Hin Resort as the sister site of Jaras Phuket, the original of which has held a place in the Michelin Guide's Thailand edition since 2021. The Hua Hin site opened in 2021 and has been the default answer, since, to the question of where to take a client for the most considered meal in the city.

The concept is a tasting menu drawn from a rotating region of Thailand — the Gulf, the Northeast (Isaan), the North (Chiang Mai), the Central plains. Each menu runs for roughly a quarter and is built around dishes the chef has sourced and reworked from home cooks and regional institutions rather than from the canonical Bangkok restaurant canon. The result is a meal that reads as a selected regional traverse rather than a generic “modern Thai” tasting; a guest who has eaten in Bangkok's top rooms will recognise this as a parallel conversation rather than a repeat.

The dining room is a medium-sized covered pavilion inside the InterContinental's beach-facing property, with soft lighting, high-backed banquettes, and a view onto a central orchid-and-water feature. Service is resort-hotel polished (a significant strength in a city where the mid-market rooms can be inconsistent) and the wine list carries a short but good selection of French whites and German rieslings that pair with the spice-forward menu better than the local sauvignons do.

For a client dinner, this is the single highest-confidence booking in Hua Hin — the address is inside a known luxury property, the setting is sufficiently private, the menu delivers a story to talk through, and the service is calibrated to the price point. Reservation lead time is two weeks for weekend dinner in the high season; mid-week is more accessible.

Why It's Perfect for Impress Clients

Jaras is the client-impressing reservation in Hua Hin because the meal itself is the argument: a tasting-menu progression with a clear regional premise, served inside a property your client already knows as a luxury brand, with enough ceremonial cadence that the evening pays forward into the next morning's meeting. For a deal-close dinner in Hua Hin, this is the reservation — make it directly through the InterContinental concierge rather than a booking app, and brief the team on any dietary or allergy requirement at least seventy-two hours ahead.
