Uchi Houston sits in a converted Montrose fire station at 904 Westheimer Road, the Houston outpost of Tyson Cole's James Beard-winning Austin original. The hama chili, the maguro sashimi and the omakase are the order, with a dinner around 90 to 170 dollars a head and more at the bar. It opens Monday for dinner from 4pm, an early start that suits the chef's-counter omakase. Monday is one of the calmer nights to land a counter seat rather than a table, so book ahead for the bar.
