Feuille received One Michelin Star and a Michelin Green Star in the 2026 Hong Kong guide, one of only four Hong Kong restaurants awarded the Green Star, which recognises commitment to sustainable gastronomy. The Green Star designation is not greenwashing; Feuille's sourcing programme, kitchen waste protocol, and supply-chain documentation represent a genuine commitment to the principles the award names.

The kitchen is plant-based without apology or qualification. There is no fish dish. There is no 'vegetarian option'. The twelve-course tasting menu presents vegetables, fungi, seaweed, fermented grain products, and botanical preparations as the entire culinary argument, and the argument is convincing. A confit of celeriac that has been aged in a dehydration programme for six weeks and emerges with a flavour depth that any meat preparation would struggle to match. Kombu-cured kohlrabi with a koji cream that the kitchen has fermented for three months. A wild mushroom consommé clarified over eight hours with a clarity and intensity that belongs in any three-star context.

The dining room is in a Central heritage building, restored with reclaimed wood surfaces, living plant walls, and a palette of deep greens and earth tones that reflect the kitchen's philosophy without becoming pedagogical. Sixteen covers. The beverage programme is biodynamic and natural-wine focused, with a sake selection that pairs unexpectedly well with the umami-forward preparation method.

Feuille exists in a city that consumes more live seafood per capita than almost any other. Its Michelin recognition represents a significant cultural statement, that Hong Kong's most discerning diners can find equal or greater satisfaction in preparations that contain no animal products whatsoever.
